Andres Cardona is a producer from Colombia who heirs from his family farm of La Ilusion. He has evolved from a 12-year-old coffee worker to a processor who now buys neighboring farms cherries and has created high-end protocols and processes for his fermentations

Purple Honey Process: What does purple honey mean?
This coffee starts with a 96-hour fermentation process where actual sugar cane honey is introduced. Then, it’s dried in controlled driers, to help speed up the fermentation process and ensure the proper results.
This coffee is quite the experience.
Right off the bat this coffee tastes like a bold merlot with lots of berry forward funkiness. As the cup goes on, it takes on more fireweed honey flavors. Finally, it finishes with notes of pepper and chocolate.
